Step 1
Heat cream, butter and coffee granules in medium saucepan over low heat until butter is melted. Remove from heat. Add chocolate. Let stand for 2 to 3 minutes; stir until chocolate is melted. Return to heat for a few seconds if necessary to melt chocolate.
Step 2
Refrigerate for about 1 hour or until firm enough to roll.
Step 3
Roll chocolate mixture into 1-inch balls; roll in coconut flakes. Store at room temperature in airtight container.
Truffles can also be rolled in 1 cup toasted chopped pumpkin seeds or toasted chopped pecans.
