Preheat the oven to 170°C / 325°F (fan). Line a baking sheet with baking paper.

Place the mashed banana in a mixing bowl. Add the oats, honey, and coconut oil. Stir well until combined, then leave to rest for 10 minutes to allow the oats to absorb moisture.

Stir in the chocolate chips (reserve a small handful for topping).

Scoop about 1 tablespoon of the mixture, roll into a ball, then flatten gently into a thick disc (about 1 cm thick). Place on the prepared baking sheet. Repeat with the remaining mixture.
