  • 12.00 oz whole fresh dates
  • 2.00 tbsp water (plus more for soaking)
  • 1.50 tbsp cocoa powder
  • 0.50 cup mixed nuts, crushed (almonds, cashews, walnuts, pistachios)
  • 0.30 cup sesame seeds per serving

Place the dates in a bowl and cover with warm water. Soak for 20 minutes, or until softened. Drain well, remove the pits, and transfer the dates to a food processor.

Add 12 tablespoons water and pulse until a thick, smooth paste forms.

Transfer the date paste to a mixing bowl. Add the cocoa powder, crushed nuts. Mix thoroughly until evenly combined.

Place the date mixture on top and shape into a log, rolling gently to coat evenly with sesame seeds. Lightly dampen hands if needed to prevent sticking.

Wrap the roll tightly in plastic wrap, then in foil. Freeze for at least 2 hours until firm.

Slice into rounds and serve. Store remaining slices in an airtight container in the freezer.
