  • 0.25 tsp salt
  • 1.00 cup quick oats
  • 1.00 cup brown sugar , packed
  • 0.50 cup granulated sugar
  • 1.00 cup butter, softened
  • 2.00 tbsp honey
  • 2.00 tsp vanilla extract
  • 2.00 large eggs
  • 1.50 cups diced dates

Preheat the oven to 300°F (150°C). Line baking sheets with baking paper.

In a medium bowl, whisk together the flour, baking soda, salt, and oats. Setaside.

In a large mixing bowl, combine all the ingredients and mix till well incorporated

Add the flour mixture, diced dates Mix until combined — do not overmix.

Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them evenly apart.

Bake for 18–22 minutes, or until the cookies are lightly golden.

Transfer immediately to a cooling rack and allow to cool before serving.
