- Heat 200g of white sugar, and 200ml water in a pan.
- Once the mixture starts boiling, immediately add 90g of butter. Mix well for evenness, and to avoid burning some of the sugar.
- Prepare 120ml NESTLÉ All Purpose Cream. Pour in slowly, in around 3-4 batches. Mix evenly to make your caramel syrup consistent. Pouring too fast will cool mixture too much, too fast— affecting the quality of your syrup.
- If there is too much separation, whisk until solids and liquids re-incorporate. This is important for a smooth finished product.
- Examine thickness of syrup, add water to loosen up if the resulting mixture is too thick.
