  • onion, roughly chopped
  • fresh bell peppers (red or orange preferred), chopped
  • habanero pepper, to taste
  • salt, to taste
  • crushed red pepper, to taste
  • vegetable oil, for frying

Add the black-eyed peas, onion, bell peppers, habanero, salt, and crushed redpepper to a blender.

Blend until smooth, adding as little water as possible to achieve a thick, spoon able batter.

Heat vegetable oil in a frying pan over medium-high heat.

Scoop spoonfuls of the batter into the hot oil and fry until golden brown and crisp, turning as needed for even cooking.

Remove and drain briefly on paper towels.
