  • 2.00 tbsp vegetable oil (plus more for cooking)
  • 2.00 ripe bananas, mashed

In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, combine the beaten egg, milk, vegetable oil, and mashed bananas.

Add the dry ingredients to the banana mixture and stir gently until just combined. The batter should be slightly lumpy — do not overmix.

Heat a lightly oiled griddle or frying pan over medium-high heat.

Pour or scoop about ¼ cup batter onto the hot surface for each pancake.
