To make the maple pecan syrup combine all the ingredients apart from the cream and vanilla extract in a small pan over medium-high heat, stirring, until smooth. Remove syrup from heat and whisk in the cream and vanilla extract. Set aside to cool completely (any leftover syrup can be stored in the fridge for future use).
