Espresso Tonic

A sharp espresso suspended over a transparent, bubbly bed of tonic water. We know this sounds like a strange combination, but the name of this drink has been spotted on menus at speciality cafes around Europe, slowly, but surely, the drink has become a staple on café menus, so, lets figure out how to make an espresso tonic.

What you need

  • 30ml Espresso
  • 100-200ml Tonic water, to top up
  • Ice
  • 1 Lime
  • Required equipment
  • Glass, to serve

STEP ONE

Prepare a double espresso and leave to cool. Fill up a 200ml glass with ice

STEP TWO

Half the lime, and squeeze the juice from one half, then cut the other into wedges and save one for later, freeze the rest for ice cubes or pack up and pop in the fridge for later use. Pour the lime juice over the ice. Then pour in the tonic water, so that your class is about 2/3 full.

STEP THREE

Then pour in the slightly cooled double espresso, add the lime wedge on top. Sip away and enjoy your very own espresso tonic.
