Key to the process

Agatha Fernandes loves working in the spraying area at our Araras roastery in the state of São Paulo, Brazil. Here she plays a key role in making soluble coffee. “The process is straightforward” she says. After extraction, the coffee is sprayed with hot air, turning it into granules. Steam helps agglomerate it and turn it into soluble coffee. “To guarantee quality, we test throughout,” she explains “We control the product’s colour, moisture and flavour by tasting.”​

Capturing the flavour

In the three years that she’s worked at the roastery, Agatha has acquired incredible knowledge and skill and is proud of how her expertise contributes to the coffee-making process. The Araras roastery uses the spray drying technique – one of two employed globally – to ensure soluble coffee retains its rich sensory attributes, flavours, aromas and characteristics. “Unlike freezing drying, we use high temperatures to dry the coffee,” she explains.

Agatha is an advocate for soluble coffee. “It’s easier to store and prepare,” she says. “Spray drying makes it possible for everyone in the world to enjoy the essence and quality of coffee.” She believes that this simple process has massive impact. “Through it we make coffee available to houses around the world. People just add water and the coffee’s ready,” she smiles. “As a Brazilian, this makes me very happy, because now everybody can enjoy the same quality coffee that I drink here in Brazil.”​

A shared passion

Rogério de Oliveira, a master barista at our headquarters in the state of São Paulo, Brazil, discovered his passion for coffee while on an exchange trip to Dublin. Working in a coffee shop, he was amazed by the rich world of coffee and the transformative role of a barista. “That's when I fell in love,” he says. When he began working with NESCAFE® he was immediately impressed by our shared commitment to quality coffee. “I discovered that NESCAFÉ® cares for producers and ingredients, and has developed some well-crafted extraction and preparation processes,” he explains.

Performing numerous roles

Rogério's passion for coffee runs deep. “I’m inspired to teach people more about this drink, and to help achieve the ideal flavour,” he says. He relishes being able to share the necessary expertise to properly "understand aroma, coffee body and how to really taste it" But that's not all, he also plays a guiding role in the organisation, where he passes on his knowledge of the entire history of coffee and how the story flows from tree all the way to cup. He is also instrumental in the creation of new recipes that enable coffee lovers to "take a good cup of coffee, anywhere"

Coaching and collaborating

Rogério is involved in two key initiatives. He trains up-and-comers at our Future Barista Program, sharing skills and passion. “It's about passing on knowledge from production up until the final product". There’s an entrepreneurial aspect to the program too, where future baristas are groomed as potential future business owners, like siblings Tamiris Abreu and Leticia Dos Santos Abreu who own Sister Coffee in Paraisópolis, Brazil. “I’m proud to play my part here too” he admits.
Many people think of NESCAFE® as the soluble coffee they enjoy at home, but you can also find NESCAFE® coffee machines in various out-of-home locations, like offices, universities and hotels. These machines are great if you want to grab a coffee on the go and the recipes are developed by a team who are assisted by Rogério, who ensures that consistency is maintained and that the delicious flavour and distinctive aroma are always present.

Over time Rogério has fine-tuned his Barista skills and his impressive technical understanding, making him well aware that a quality coffee experience involves more than just brewing. “A cup of coffee is complex. It has an aroma and sensorial notes, and if you don’t do it right, you might not get it,” he says, before adding, “A simple cup of coffee can be so much more than that, it can be an experience”.

The trouble with wind

On Brazilian farms, wind can cause numerous issues. Conilon crops – a type of coffee grown in Brazil – are sensitive. They don’t fare well in strong gales and can suffer damage. In the past windy conditions resulted in major losses for farmer Eduardo Bortolini, compromising his output. “Strong south winds during flowering can cause a significant drop in flowers,” he says. This leads to less coffee cherries and a smaller yield. In short: not an ideal start to the coffee production process.

The right trees

Eduardo made various attempts to address this issue. “We used wind-breaking techniques that didn’t suit my farm,” he says. “Then we started working with Liliane Céo who introduced us to other solutions.” Liliane, a NESCAFÉ® Plan agronomist, suggested trees that are good wind breakers, serve as hedges or protect water bodies without damaging coffee crops. This initiative is an example of how we’re introducing regenerative agriculture practices to help create healthier ecosystems on coffee farms.

​“The benefits are already visible here,” says Eduardo, referring to the noticeable improvements in his farm’s output. “NESCAFÉ® provided me with the right solutions,” he says. By introducing specific techniques to address localised problems, we are delivering on our commitment to farmers like Eduardo. “This regenerative agriculture approach is giving us the right kind of balance,” he says. “And I’ll continue to focus on that, together with NESCAFÉ®.”

Eliseu de Lima has been a roaster for over a decade. He’s honed his craft and sharpened his senses, expertly roasting coffee beans to the exact point where they fully reveal their character. “With experience, we acquire a sensitivity for flavour and aroma,” he says. Controlling roasting temperature and time requires technical precision and attention to detail. It’s a complex process that ensures we deliver a high-quality, well-balanced cup of coffee.​

Keen senses

Eliseu is highly adept at reading coffee. “We know how to differentiate various types of roasts,” he explains, referring to dark, medium and light. He notices immediately if the coffee is dry, burnt or lacking in moisture, or if the colour is off. “As the years go by you are able to see the defects,” he says. “In a few seconds, you already know if something is going to go wrong.” He then responds promptly, ensuring that quality is maintained. ​

A dream come true

A father of two, Eliseu always wanted to work at our Araras roastery in the state of São Paulo, Brazil. “Getting in was like a dream to me,” he says. After a friend recommended him, he got the job and that same friend went on to train him. “When I see him on the street I thank him,” he smiles. “He helped me a lot.” It gives him immense joy to see his fellow roasters at work. “It’s great to know that you work at a NESCAFÉ® roastery, producing coffee for the entire world,” he says. “That’s priceless.”

In Brazil, we collaborate with numerous farm managers to help them improve coffee yields, one of them being Luiz Santos. “With an increased focus on biodiversity, we have noticed greater resilience, not only from coffee trees, but from the overall plant life,” he says. Resilience is the ability of an ecological system to cope with shocks and disturbances by adapting to environmental change, while retaining original structure and functionality.

Birds, bees and other insects

​Planting the right trees improves biodiversity, acting as a catalyst for more positive changes. “When you increase the number of trees, you attract diverse bird species from other regions and they can help disseminate seeds.” says Luiz. Beneficial insects and birds are also an ideal partner for pest control, and Luiz has even discovered the advantages of introducing trees with flowers that attract bees. “We have several species of eucalyptus for bees to pollinate,” he says. “This can make a difference to the final product.”

Natural solutions

To maintain biodiversity, Luiz constantly monitors the farm he manages, planting trees to increase his forest, reducing silt in the waterways and ensuring his soil is healthy. This conscious, comprehensive approach have given him greater control of the farm. “By improving biodiversity I’ve increased fodder plants, creating a climate that’s much milder and ideal for coffee trees,” he says. “This provides thermal comfort, stimulating plant growth and contributing to improved productivity.”

She reviews and tests green coffee, blends and roasts, determining roasting and grinding profiles that best capture specific flavours and aromas. This highly skilled job keeps her motivated. “Just smelling coffee inspires me to do something different and new,” she says.​

Marta has worked in the coffee industry for over two decades, and joined our Araras roastery in the state of São Paulo, Brazil, five years ago. “My grandparents and my parents worked in agriculture, so I’m the third generation to work with coffee,” she says. “I started in a small company, but my big dream was to work for NESCAFÉ®. And I accomplished it.” She enjoys using her deep knowledge and unique insights to create well liked coffee products. “My goal is to help create coffee that everyone can enjoy,” she says.​

Luiz grew up on the Fazenda Chapadão, and has managed the farm for nine years. "Regenerative agriculture doesn’t focus solely on coffee crops,” he explains. “It takes in everything, including trees, water and surrounding plants.” He believes that regenerative agriculture practices that work with nature enhance soil health, improving both his coffee trees’ resilience and the resultant coffee cup quality. “When I take good care of nature, the coffee benefits” he says.

Luiz employs techniques specific to his needs. “By increasing composting, we reduce the use of agrochemicals,” he says. He plants herbs to preserve water, and trees to maintain soil cover, and he relies on his bees too. “They create uniform flowering and very good pollination, improving the quality of the harvest,” he explains. Luiz knows that his farming methods are making an impact. “Our goal when working with NESCAFÉ® is to take care of the environment and in so doing, improve the coffee" he says.

Rafael Bortolini, from Linhares (Espírito Santo), in Brazil, is proud to be a fourth-generation farmer, but it all could have turned out differently. “I thought about being a lawyer, working in the city,” he explains. His family ties proved stronger, as did the allure of coffee production. Over time he realised that he could make a difference, both to how the farm operated and to the families involved. “Our workers are the real heart of the farm,” he says. “There’s a shared desire to build it and grow together.”​

Traditions for the future

“I’m inspired by seeing the farm evolve,” says Rafael. New to farming, he learnt existing techniques from his father, all while introducing modern methods. “I have brought in technologies that improve the farm’s productivity, and the quality of work for our employees,” he explains. These include using drones to map the land, and regenerative agriculture practices – like the introduction of natural wind breaks to protect the coffee trees - suggested by NESCAFÉ® agronomists like Liliane Céo. “I’m passionate about technological growth, and understanding how to make it work,” he says.

Coffee is heritage

Rafael is well aware of how essential coffee farming is to his country. “Agriculture is a major economic contributor in Brazil,” he says. “It’s also culturally significant to Brazilians.” In retrospect he’s happy he never settled in the city, and instead embraced the opportunity to grow his family’s legacy. It’s not just because he’s helping forge new successes, it’s because contributing to a delicious cup is part of his identity. “For me coffee represents a signature from my family,” he says.​
